Honestly, the beer flavor didn't come out so much when I made a small 12 oz batch. That said, I've never noticed beer to make an extremely noticble difference when cooking with it. This mustard is going to taste very bitter and spicy, kind of like what you'd get out of a mustard packet from a Chinese fast food place. That's the thing about the beer, what you're likely to experience is the sharp taste of the vinegar and full-blown mustard action. It's the closest thing I've ever been to being mustard-gassed. when I do it again, i'm looking forward to putting honey in there and maybe some stuff like mango or another fruit.
I might try this. What beer do you people think would be best in a mustard?
