Jalapeno Weekend Part 1: Green Chili Powder

I wanted to make homemade green chili powder. I have wanted to do this for some time. The world's misconception that chili has to be red and our reliance on capitalism has prevented me from acquiring the green variety at the local grocer. The struggle ends today.

First buy some green chili peppers. Here are some Jalapenos and Poblanos.


Slice them in half and put them on your favorite dehydrator.


Wait 36 hours. These guys look like alligator hides when dried. Awesome.


You will want to skip this step. I am showing the world how a standard food processor cannot grind these peppers down to the consistency I desire.


Expected failure.


Timeout! I had to repair this fan before I even got going! The fins in a hexagonal shape around the fan are the heating element. When I got the sucker, the fan was not working and it was a damn fire hazard. I just had to lube it up with a considerable amount of 3-in-1 and baby it for a while. It is spinning like a champ now!


Now put your peppers in your favorite Japanese-made manual burr grinder. Coffee be damned (wash those grounds out first).


We have success. It is spicier than hell. Much spicier than store-bought ground Cayenne. Decent flavor as well.
